Don’t you wish you had a big ole’ bowl of this stuff?  I know you do.  It’s delicious.  It really is!  I love this stuff!  The first time I had this little black-eye-pea concoction.  My baby brother was turning 16 and I had planned this really fun meal for his birthday dinner.  It was straight off the pages of Southern Living. I really don’t know for a fact if it was absolutely delicious.  But, every time we talk about that little party, we talk about the food being just divine!  I think we have talked it up so much, we’ve made it kinda mythical.  But anyhoo…  I was so proud of that little meal.  I had cut up chicken strips and rolled them in crushed Doritos and then deep-fried them and served with salsa and fiesta ranch dip!  I know!  Yummy!  But, back to the peas…  Ever since that night, I have made this little black-eye-pea salad a zillion times.  And it is always so good.  My step-mom has her version… turning a bottle of Italian dressing upside down to try to separate all the oil and then once separated dump all the goody minus oil over the black-eye-peas.  It’s really good.  She added onion, green bell peppers, a little of this and a little of that.  

Now, since I have fallen for Lulu’s version, this is the recipe I am kinda stuck on right now.  And really, whatever version you throw together, it’s something you can fine tune yourself.  Putting your little touch on it!

If you find yourself at Lulu’s and you order her L.A.Caviar, you’ll end up paying $4.95 for a bowl.  The night we arrived on our vacation, after our grocery store run, I was able to make a batch that lasted the whole week for under ten dollars!  Pretty good deal, I think!

Caviar.  Hey, if you are from my neck of the woods, you have likely heard of Lulu’s @ Homeport.  {She’s Jimmy Buffet’s sister}  But, if you are not, you should check her out.  We love her restaurant, it is a great place for the kids.  But if you ever got a chance to hang-out at her old place, well, then you had a real treat!  We like to explore the back roads looking for beautiful things.  One of our trips with Andy’s Granny, we ended up on the deck of the Original Lulu’s.  Overlooking Week’s Bay.  Now, THAT was an experience!
