Okay, so I have got to share something with you guys concerning a recent post about some salsa!  If you missed it, you can catch it here, but basically it simple salsa that is delicious!  I scored it from The Pioneer Woman and just had to share it with you guys here on WeAreRooted!  Since I found this recipe, not only have I shared it with all you fine folks, but I have made it a gazillion times and even planted all the ingredients in my garden!  I am telling you… it’s good. 

Okay, I am rambling…  this past Fourth of July holiday we had the pleasure of enjoying good food and fine folks on the banks of the Warrior River.  We had planned to drive down with the kids and celebrate with with one facet of my amazing family.  You know,  do a little grilling, a little  eating, a little boat riding, a little eating, a little boat riding, a little eating…  Of course, I didn’t want to show up empty handed and had just made a batch of this oh-so-good SALSA the day before.  So, I grabbed the salsa  out of the fridge (it’s always better the next day anyway) and a bag of multi-grain tostitos out of the pantry and off we went… 

It was a full house and lots of good food on the table.  The ribs had been in a near death experience, and had cooked to the point of perfection, corn-just-right off the grill and just a plethera of summer-celebrating food for us to choose from.  And right there in the middle… my salsa!

Let me back up for just a minute…  I failed to mention that the day before when I was churning out this salsa, I had a little mis-hap with the food processor.  After I had added all my ingredients and hit the churn button, I could smell the aroma and then WHAM-BAM-BA-LAng-CLICK-CHLICK-BANG… What in the world?!  I stopped and thought, what a cheap little food processor {sorry Andy}.  This is ridiculous!  And pushed the button again… hmming sound and then again, CLACK-Chluck-BANG.  My gosh, what is going on…  And of course, I looked at it, kinda gave it a shake and proceeded to churn it up again.  That was one heck of a tomato.  So, I continued to churn it up till I thought I had gotten all of those hard tomatoes and onion all chopped up!  I found me a bowl, poured it up.  Did a little taste testing.  Man, that is really good salsa!  And a little more taste-testing…

Now, back to the river and the plethera of food before me… I grabbed for a spoon and wanted to give my little salsa a good stir, show off that freshness and OH MY WORD.  WHAT in the WORLD?  Surely, I didn’t!  Oh, I did!  So, THAT’S what that noise was!  I about peed on myself…

Well, I say fresh… All but the can of Rotel! 

 

This was too funny!  I quietly poured out my deadly-heavy-metal-shavings-seasoned-salsa and turned my open bag of multi-grain tostitos towards “the dip” and proceeded to “fix my plate”.

Oh, me and myself just had a time with this little ordeal… so funny!  When it gets a little cooler, I’ll have to share another story about kraut, Christmas and black tar! 

Oh, by the way… I am going to watch my baby brother GRADUATE from COLLEGE!  Oh yeah… it’s a happy day
