Summer time…  at last!  To celebrate, my crew headed SOUTH for a weekend getaway and a little fresh seafood!   One of the things my sweet husband loves almost as much as me… fishing!     And has counted down the days (since their birth) to the time he could take the kids out on the boat with him.  They’ve been out in the ocean dozens of times, but never more than a couple of miles out or  for an extended fishing trip.  But, THIS was the weekend!  Andy was so excited…couldn’t wait!   I on the otherhand was a nervous wreck, and was hoping for rain!   SO excited, I sent them off extra early with sandwiches, my love and prayers!   (LOTS of prayers!)  I watched as the tradition continued… 

I held on to the pylon, stretched out,  looking for my ship to come in…  and there they were ~ all grins, all sun-kissed and all safe and sound.   I can breath.  Of course, their was my Captain outstretched at the bow of the boat reinacting Titanic!   I don’t know who was grinning bigger: the kids, their Daddy or their Granddad!  (or me, cause no one was lost at sea ~ Andy didn’t help matters by singing the Gilligan theme song as they prepared the night before) 

Well, four hours out at sea and one fish on the stringer!  Little Miss had the keeper.. a really pretty Lane Snapper!  She was so excited as she told all the details of her FIRST fishing experience!  My little man had caught several White Snapper, Ruby Lips and even a Remora.  They were HOOKED and their Daddy was thrilled! 

So, from catchin’ to the kitchen…  Captain and the kids cleaned the catch and brought it in to Momma!  I kept it really simple by  lighlty sprinkling the fish fillets with my favorite JANE”S Krazy Mixed-Up Salt and then placed them on a bed of sliced lemons and a couple of pats of butter.  Baked it uncovered on 350 degrees for about 25 minutes, until white and flaky.  Boiled some new potatotes and fresh corn.  Served it up and called the fisherman to the kitchen table!  I have to say… it was DELICIOUS!  Best meal we had all weekend!  The fish was so clean and white, no fishy taste at all.  (I’m kinda funny about fishy stuff ~ see “Trying New Things“)  I don’t think you can really count the itty bitty piece Little Man touched with the end of his tongue, but he gave it a try.  Little Miss couldnt get enough, she thought it was delicoius!!!  Oh, the things that make a Momma proud!  Daddy of course LOVED it, wanted more!  It was a good day!

All inspired with the fresh fish, I headed to Publix for their fresh catch of the day! (snicker)  I picked up two Tilapia fillets (it did state fresh not frozen!)   and I am gonna try baking them the same as we did with our fresh catch at the beach!  I have never cooked Tillapia before,  I’ll let you know how it goes!

    My dear sweet chef of infinite surprises, “fresh not frozen” means that its not frozen at the moment. If u look closer it WILL say “previously frozen” Not even Publix can keep fish fresh that long.
